Ricotta Salata

Selvaggia is our goat’s milk ricotta. It is the most delicate ricotta salata you will ever taste. Some people say that one of the main reasons Sardinians live longer than most people in the world (blue zone) is due to the goat milk they consume, which is one of the healthiest and easiest to digest milks on earth. Use in the same way as Ricordo. Some chefs in America have defined selvaggia as Heaven.
